How to Make Quick and Spicy Mussel Soup?




Mussel soup

Cooking time 30 minutes

 You will need for 4 servings:

Ingredients :

 2 pints mussels

1 large skinned chopped tomato

 1 finely chopped onion

2 tablespoons finely chopped celery

1/2 pints water

 Squeeze lemon juice or little vinegar

 Small bunch parsley seasoning

2 oz. rice

 To garnish:

 chopped parsley

Method:

 1 Scrub mussels, discarding any that are open

 and will not close when sharply tapped. Always

 remove the 'beard' (the rather stringy part).

 2 Put into a large saucepan with onion, celery, parsley and seasoning and heat slowly until mussels open.

3 Remove mussels from liquid and take out of shells.

 4 Meanwhile reheat liquid, add rice and cook until tender with chopped tomato.

 5 Remove sprig of parsley, add mussels and lemon juice or vinegar, and reheat gently.

6 Garnish with chopped parsley.
