How to Make Easy Potato Soup by Betty Crocker?
Just under 10 minutes
You will need for 4 servings
4 medium potatoes
1 small onion
1/2 pint milk
1 pint water
1-2 chicken stock cubes seasoning
To garnish: chopped chives or parsley
1.Grate the peeled potatoes and onion and simmer for about 8 minutes with the milk and water in which the stock cubes have been dissolved.
2.Season well and include a pinch of sugar if wished.
3.Pour into hot soup cups and garnish with the chives or parsley. Variation
Cheese and potato soup
Use either plain Potato soup or Cream of potato soup and in the last two minutes of cooking stir in 4 oz. grated cheese.
Do not overcook or it will become tough and stringy.
